WHY ANTICA AUSTRALIS?
This is the original Latin term of reference in the old world for Australia and means the ‘ancient south’. It also resonates perfectly with the Southern region of Italy where Paolo is from, the ‘hidden’ food and wine destination of Ciociaria <cho-sha-ria>.
WHAT’S A LOCANDA?
This is not an Italian restaurant as you may know it. Antica Australis is an Italian ‘locanda’. A locanda is a local, casual dining establishment accessible and enjoyed by everyone. It’s a very traditional regional Italian concept of an inn, designed to provide meals for travellers looking to rest, restore and revive their spirits.
It’s a place for locals to feel at home and where visitors are warmly welcomed. This is the authentic taste of an Italian village on top of a mountain. Without having to go all the way to Italy. Instead, you get to pause, rest and revive your spirits in one of Australia’s most gorgeous villages – Carcoar on the Belubula River.
