Venison meatballs swimming in cheese sauce, with the venison sourced straight from local deer farm Mandagery Creek Venison and complemented by a fig and ginger jam made on the Cargo Road Wines vineyard. Paolo also introduced our guests to the delights of an Italian dessert from the 16th century – Zuppa Inglese (or ‘English Soup’, a name which really doesn’t do it justice). It’s the Italian version of trifle, think tiramisu and then raise it ten.
